“Paçoca de banana da terra” is a typical dish of the Rondônia cuisine (a State in the North region of Brazil), but it is also found in other regions. Delicious in its simplicity, can be served for breakfast, lunch or as a snack, always accompanied by a “cafezinho”.
The recipe has few ingredients (local foods) and it is very easy to make.


Ingredients
• 3 ripe plantains
• a pinch of salt
• 200 g di cocco fresco grattugiato
• sugar (optional)

Preparation method

  1. Wash the whole plantain with the peel on. A ripe plantain has a dark skin with reddish pulp.
  2. Cut the ends off and cut each plantain into two or three pieces.
  3. Put the plantains in a pot with a pinch of salt and cover with cold water. Cook until the skin cracks and the flesh becomes tender. It takes 10-20 minutes.
  4. Peel the cooked plantains and let them cool.
  5. Using a fork crush them and add the grated coconut a little at a time. If you wish, add a little sugar (white or brown) – in my opinion there is no need for sugar.
  6. Pour the plantain mixture on a serving platter or in small bowls.
  7. Store in the fridge.
