Prawns are the basis for a cream-like sauce, which is served with &#8220;aca\u00e7\u00e1&#8221; or white rice, and is also used as a filling for &#8220;acaraj\u00e9&#8221; (fried bean pasties). This is a very rich recipe, but the everyday version may be made only with fish and fresh prawns or with leftover chicken (cooked and shredded).<\/p>\n<p><strong>Ingredients<\/strong><br \/>\n\u2022 300 g fish fillets<br \/>\n\u2022 200 g fresh prawns<br \/>\n\u2022 100 g dessicated shrimps<br \/>\n\u2022 200 g salt cod<br \/>\n\u2022 2 ripe tomatoes<br \/>\n\u2022 \u00bd onion<br \/>\n\u2022 1 green (spring) onion<br \/>\n\u2022 50 g sweet pepper<br \/>\n\u2022 salt<br \/>\n\u2022 fresh parsley<br \/>\n\u2022 fresh coriander<br \/>\n\u2022 50 ml corn oil<br \/>\n\u2022 hot pepper<br \/>\n\u2022 150 g stale bread<br \/>\n\u2022 200 ml coconut milk<br \/>\n\u2022 500 ml fish stock or water, approximately<br \/>\n\u2022 2 tablespoons palm oil<\/p>\n<p><strong>Preparation method<\/strong><br \/>\n1. Soak the salt cod and the dessicated shrimps, separately, in cold water to cover, for 24 hours refrigerated, changing the water every 6 hours.<br \/>\n2. Blanch the salt cod on low heat, crumble and remove any bones.<br \/>\n3. Drain and grind the (no longer) dried out shrimps.<br \/>\n4. In a large saucepan saut\u00e9 the onion in the oil, the green onion and the black pepper (grated or blended together).<br \/>\n5. Add skinned and cubed tomatoes, finely chopped garlic and herbs.<br \/>\n6. Add the fish, shrimps, cod, prawn, the bread soaked in coconut milk and cook stirring occasionally until it thickens to a soft paste. If necessary add a little more stock to adjust the consistency.<br \/>\n7. Add the palm oil at the end of cooking.<br \/>\n8.
