We hope will soon be available in Italy!<br \/>\nThere are endless variations to this basic recipe but, in each one of them, the particularly soft and sweet flavor and the creamy texture of this root prevail.<\/p>\n<p><strong>Ingredients<\/strong><br \/>\n\u2022 600 g arracacha<br \/>\n\u2022 1 medium onion<br \/>\n\u2022 1 garlic clove (optional)<br \/>\n\u2022 3 tablespoons olive oil<br \/>\n\u2022 1,2 liters water<br \/>\n\u2022 parsley or 3 tablespoons heavy cream<br \/>\n\u2022 salt and ground pepper or nutmeg, to taste<\/p>\n<p><strong>Preparation method<\/strong><br \/>\n1. Scrape arracacha with a paring knife. Wash and cut into pieces.<br \/>\n2. Peel and chop the onion, chop the parsley and peel the garlic.<br \/>\n3. Heat olive oil and saut\u00e9 onion and garlic until tender.<br \/>\n4. Add arracacha pieces and saut\u00e9 for a few minutes.<br \/>\n5. Add the water, cover and cook over low heat until tender. It takes less than 15 minutes.<br \/>\n6. Let it cool down. Blend all ingredients together until smooth.<br \/>\n7. Season with salt and ground pepper or nutmeg.<br \/>\n8. Add the chopped parsley or the cream and, if necessary, add a little more boiling water, until it has the consistency of thick cream.<br \/>\n9. Serve hot.
