Although it is not a typical Brazilian recipe, for I only ate it at home, I propose the recipe because it is exquisite.<br \/>\nIt can be served as an appetizer or a main course, accompanied by white rice.<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p><strong>For the batter:<\/strong><br \/>\n\u2022 60 g butter<br \/>\n\u2022 60 g all-purpose flour<br \/>\n\u2022 400 ml milk<br \/>\n\u2022 1 teaspoon sugar<br \/>\n\u2022 a pinch of salt<br \/>\n\u2022 4 eggs<\/p>\n<p><strong>For the filling:<\/strong><br \/>\n\u2022 500 g medium-sized prawns<br \/>\n\u2022 100 g tomato pur\u00e9e<br \/>\n\u2022 250 g requeij\u00e3o or cheese cream<br \/>\n\u2022 20 &#8211; 30 g all-purpose flour (depends on the consistency of the cheese)<br \/>\n\u2022 1 teaspoon Worcester sause<br \/>\n\u2022 1 tablespoon chopped parsley<br \/>\n\u2022 1 tablespoon green (spring) onions chopped<br \/>\n\u2022 2 tablespoons olive oil<br \/>\n\u2022 salt and pepper<br \/>\nTo garnish:<br \/>\n\u2022 300 g tomato pur\u00e9e<br \/>\n\u2022 whole prawns<br \/>\n\u2022 oil, garlic clove, salt and pepper<\/p>\n<p><strong>Preparation method<\/strong><\/p>\n<p><strong>For the batter:<\/strong><br \/>\n1. Melt butter in a saucepan, add flour and saut\u00e9 them.<br \/>\n2. Add the hot milk, a little at a time, stirring constantly. When it begins to thicken, cook for 2 more minutes, stirring constantly.<br \/>\n3. Allow to cool and add egg yolks one at a time, sugar and salt, mixing well so the yolks don&#8217;t curdle.<br \/>\n4. Gently fold the stiff egg whites.<br \/>\n5. Pour the mixture into a rectangular baking tin (around 25&#215;37 cm), lined with grease-proof paper.<br \/>\n6. Bake at 190\u00b0 C until golden color. Stick a toothpick in the center of the cake, if it comes out clean the cake is done. It takes around 30 minutes.<br \/>\n7. Roll the &#8220;cake&#8221; into a cylinder with the grease-proof paper. Set aside and keep warm while you make the filling and the garnish.<br \/>\nNote: The &#8220;cake&#8221; can be made, baked and rolled the day before and stored in the fridge, wrapped with grease-proof paper and plastic film. Heat in microwave to use.<\/p>\n<p><strong>For the filling:<\/strong><br \/>\n1. Wash and finely chop the green onion and the parsley.<br \/>\n2. Saut\u00e9 the green onion in oil.<br \/>\n3. Add the peeled prawn and cook for a few minutes, season with salt and pepper.<br \/>\n4. Add the flour and saut\u00e9. Add the tomato pur\u00e9e and mix well.<br \/>\n5. Add the cheese and stir constantly over low heat until the mixture is homogeneous.<br \/>\n6. Add the parsley and Worcester sauce at the end.<\/p>\n<p><strong>For the garnish:<\/strong><br \/>\n1. Saut\u00e9 the prawn shells with garlic in oil.<br \/>\n2. Add the tomato pur\u00e9e, a half cup of water and let boil for a few minutes to flavor the tomato pur\u00e9e.<br \/>\n3. Pass the sauce through a sieve to remove the shells.<br \/>\n4. Season whole prawns with salt and pepper and saut\u00e9 them with garlic in oil.<\/p>\n<p><strong>To assemble the recipe:<\/strong><br \/>\n1. Roll out the &#8220;cake&#8221;, spread the prawn sauce cream over the &#8220;cake&#8221; and use the grease-proof paper to help with the rolling. Allow to rest &#8220;wrapped&#8221; for a few minutes.<br \/>\n2. Slide the &#8220;wrapped&#8221; roulade onto a bed of lettuce in a serving dish with the roll seam side down, and gently remove the grease-proof paper.<br \/>\n3. Spread the tomato sauce over the top.<br \/>\n4. Garnish with whole shrimps and\/or parsley leaves.<br \/>\n5.
