In Brazil the rice mainly used is the Basmati variety and the parboiled rice, and neither release starch during cooking, therefore, there is no creamy risotto and no &#8220;on the wave&#8221; risotto.<br \/>\nThe <em><strong>risoto de camar\u00e3o<\/strong><\/em>, in countless versions, is a typical specialty of the long, very long, Brazilian coast.<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p><strong>For the Saut\u00e9:<\/strong><br \/>\n\u2022 \u00bd onion<br \/>\n\u2022 1 garlic clove<br \/>\n\u2022 2 tablespoons olive oil<br \/>\n\u2022 chopped parsley<br \/>\n\u2022 120 g fresh or frozen peas<br \/>\n\u2022 150 g mature tomatoes<br \/>\n\u2022 750 g medium sized prawns<br \/>\n\u2022 50 g olives green or black, pitted<br \/>\n\u2022 2 hard-boiled eggs<\/p>\n<p><strong>For the risotto:<\/strong><br \/>\n\u2022 \u00bd onion<br \/>\n\u2022 350 g Basmati rice<br \/>\n\u2022 1 garlic clove<br \/>\n\u2022 700 ml prawn stock, approximately<\/p>\n<p><strong>Preparation method<\/strong><\/p>\n<p><strong>Preparation of the prawn stock:<\/strong><br \/>\n1. Clean the prawns by removing and discarding the head, peeling off the shell and tail and removing and discarding the dark cord that runs through the back of the prawns.<br \/>\n2. Roast the shells in olive oil or butter, add 800 ml water and boil for 10 minutes. You can add fish heads and herbs.<\/p>\n<p><strong>Preparation of the saut\u00e9ed prawn sauce:<\/strong><br \/>\n1. Saut\u00e9 the chopped onion and crushed garlic in olive oil.<br \/>\n2. Add the peeled and cubed tomatoes, the chopped parsley and cook for a few minutes.<br \/>\n3. Add the saut\u00e9ed prawns, the boiled peas, and saut\u00e9 for a few minutes.<br \/>\n4. Add olives and diced hard-boiled eggs, and just keep warm without continuing to cook.<\/p>\n<p><strong>Preparation of the risotto:<\/strong><br \/>\n1. Wash the rice several times until the water becomes clear.<br \/>\n2. Saut\u00e9 the chopped onion and garlic in corn oil in a large pan.<br \/>\n3. Add the washed and drained rice, the salt, and fry for a minute.<br \/>\n4. Add almost all the prawns stock, and cook for around 6-7 minutes. Add a little stock or water if the rice is too hard.<br \/>\n5. Add the saut\u00e9ed prawn sauce at the end and stir gently to combine.<br \/>\n6.
