Many claim that <em><strong>quibebe<\/strong><\/em> has an African origin because &#8220;kibebe&#8221; is a word from the Quibundo language but, as pumpkin is native to Central America and native Americans used it before the Portuguese arrival, <em><strong>quibebe<\/strong><\/em> is probably an afro-indigenous teamwork.<br \/>\nAs an alternative to pumpkin pur\u00e9e you can cut the pumpkin into small cubes and cook it as directed until all the pieces are soft.<\/p>\n<p><strong>Ingredients<\/strong><br \/>\n\u2022 1 Kg pumpkin (I prefer using butternut squash)<br \/>\n\u2022 1 onion chopped<br \/>\n\u2022 1 garlic clove chopped<br \/>\n\u2022 1 tablespoon olive oil<br \/>\n\u2022 chopped parsley<br \/>\n\u2022 salt<br \/>\n\u2022 black pepper<\/p>\n<p><strong>Preparation method<\/strong><br \/>\n1. Peel the pumpkin (I prefer using butternut squash) and cut into small pieces: they cook faster.<br \/>\n2. Saut\u00e9 chopped onion with garlic in the oil.<br \/>\n3. Add the pumpkin, a little water, cover and cook over low heat until softened. Stir occasionally and, if necessary, mash with a fork.<br \/>\n4. Add the chopped parsley at the end and cook for another few minutes.<br \/>\n5.
