This recipe combines pineapple and coconut, the major players in traditional Brazilian sweets.<\/p>\n\n\n\n<p><br><strong>Ingredients<\/strong><\/p>\n\n\n\n<p><br><strong>For the coconut and pineapple mixture:<\/strong><br>\u2022 150 g dry grated coconut<br>\u2022 100 ml warm water<br>\u2022 1 fresh pineapple or syrup pineapple fruit<br>\u2022 200 g sugar<br>\u2022 1 teaspoon cinnamon powder<br><\/p>\n\n\n\n<p><strong>For the coconut cream:<\/strong><br>\u2022 400 ml coconut milk<br>\u2022 200 ml milk<br>\u2022 2 egg yolks<br>\u2022 100 g sugar<br>\u2022 25 g corn starch<br><\/p>\n\n\n\n<p>T<strong>o assemble the pav\u00e9:<\/strong><br>\u2022 250 g Savoyard biscuits<br>\u2022 50 ml rum<br>\u2022 200 ml syrup from canned pineapple or pineapple juice<br>\u2022 grated coconut for garnish<\/p>\n\n\n\n<p><strong>Preparation method<\/strong><\/p>\n\n\n\n<p><strong>Preparation of the coconut and pineapple mixture:<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Rehydrate the dry coconut in warm water.<\/li><li>Drain canned pineapple, set aside the syrup and cut the slices into very small cubes. If you use a fresh pineapple, keep the juice to moisten the biscuits.<\/li><li>Combine all ingredients in a saucepan and cook over moderate heat for 3 minutes, stirring with a wooden spoon.<\/li><\/ol>\n\n\n\n<p><strong>Preparation of the coconut cream:<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>In a saucepan dissolve corn starch and egg yolks into the coconut milk.<\/li><li>Add the remaining ingredients and cook over medium heat stirring constantly until mixture thickens.
