This is a very fresh and elegant mousse, even for important occasions.<\/p>\n\n\n\n<p><br><strong>Ingredients<\/strong><\/p>\n\n\n\n<p><br><strong>For the mousse:<\/strong><br>\u2022 250 ml passion fruit concentrate juice<br>\u2022 150 ml water<br>\u2022 20 g gelatin sheets<br>\u2022 3 egg whites<br>\u2022 250 g sugar<br>\u2022 500 ml fresh whipping (heavy) cream<\/p>\n\n\n\n<p><br><strong>For the sauce:<\/strong><br>\u2022 50 ml passion fruit concentrate juice<br>\u2022 250 ml water<br>\u2022 3 tablespoons sugar<br>\u2022 1 tablespoon corn starch<br>\u2022 passion fruit pulp for garnish<\/p>\n\n\n\n<p><strong>Preparation method<\/strong><\/p>\n\n\n\n<p><strong>Preparation of the mousse:<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Dilute the &#8220;maracuj\u00e1&#8221; concentrate juice (for the mousse) with the water.<\/li><li>Allow the gelatin to soak in cold water.<\/li><li>Beat egg whites with sugar until stiff and set aside.<\/li><li>Beat the whipping (heavy) cream just slightly &#8211; it shouldn&#8217;t thicken &#8211; and set aside.<\/li><li>Moderately heat the diluted juice, add the drained gelatine, stir until dissolved and put in fridge to harden.<\/li><li>When the gelatin begins to thicken, combine the stiff egg whites and whipping (heavy) cream with an electric mixer.<\/li><li>Pour the mousse into individual dessert bowls and allow to thicken in the fridge.<\/li><\/ol>\n\n\n\n<p><strong>Preparation of the sause:<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Dilute the concentrated passion fruit juice with the water.<\/li><li>Dissolve the starch in the liquid ingredients of the sauce, add the sugar and cook over medium heat stirring constantly. Allow to boil and let the mixture simmer gently for 2 minutes.
