The &#8220;cozido&#8221; however, is far closer to its &#8220;ancestors&#8221;, differentiated almost exclusively by the addition of local ingredients, and some of them are quite sweet, such as sweet potatoes, \u201cmandioquinha\u201d and bananas.<\/p>\n\n\n\n<p><br><strong>Ingredients<\/strong><br>\u2022 500 g beef cubes<br>\u2022 150 g portughese sausage<br>\u2022 300 g pork ribs<br>\u2022 2 ripe tomatoes<br>\u2022 1 onion<br>\u2022 1 garlic clove<br>\u2022 1 bay leaf<br>\u2022 1 small bunch of parsley tied with string<br>\u2022 salt and chilli pepper<br>\u2022 olive oil<br>\u2022 200 g potatoes<br>\u2022 200 g sweet potatoes<br>\u2022 150 g carrots<br>\u2022 200 g pumpkin<br>\u2022 200 g savoy cabbage<br>\u2022 200 g manioc<br>\u2022 200 g eddoe<br>\u2022 200 g yam<br>\u2022 1 chayotte<br>\u2022 100 g wild cabbage or Kale Black Tuscany<br>\u2022 2 plantain bananas or normal bananas<\/p>\n\n\n\n<p><strong>Preparation method<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Chop the tomatoes, the onions and the garlic. Put them in a large pan with the beef cube and the other meats and saut\u00e9e in the oil.<\/li><li>Add \u00bd litre of boiling water, the herbs and spices, cover the pan and cook over low heat.<\/li><li>Cut the vegetables into chunks and cook them in another pan with 1 litre of boiling salted water. Once a vegetable piece is soft remove from the pan and set aside.<\/li><li>Combine cooked vegetables and meat in one pot, remove parsley and bay leaf.<\/li><li>Remove some of the stock and set aside to make the \u201cpir\u00e3o\u201d.<\/li><li>Add the peeled bananas and simmer for a few minutes to blend the flavors together.<\/li><li>Serve with &#8220;arroz branco&#8221; and \u201cpir\u00e3o\u201d.<\/li><\/ol>\n\n\n\n<p>Yield: 6 &#8211; 8 servings.<\/p>\n\n\n\n<p><br><em>Posted on: 11 November 2011<\/em><\/p>\n","protected":false},"excerpt":{"rendered":"<p>There are an infinite number of long cooking recipes using meat and vegetables in Europe that are the basis for \u201cfeijoada\u201d and &#8220;cozido&#8221;.
