The recipe comes from the state of Cear\u00e1, but can be found all over Brazil, and there are innumerable variations for it.<br>The curious name of this recipe is an allusion to &#8220;Bai\u00e3o&#8221; &#8211; a Brazilian traditional rhythm &#8211; and was immortalized by Humberto Teixeira and Lu\u00eds Gonzaga in the homonymous popular song. &#8220;Bai\u00e3o&#8221; style is danced in a close embrace, so as in this recipe rice and beans are cooked together.<\/p>\n\n\n\n<p><br><strong>Ingredients<\/strong><br>\u2022 250 g black-eyed peas<br>\u2022 1 bay leaf<br>\u2022 200 g basmati o parboiled rice<br>\u2022 50 g bacon, chopped into small chunks<br>\u2022 150 g jerked beef<br>\u2022 100 g smoked sausage, chopped into small pieces<br>\u2022 1 onion, chopped<br>\u2022 2 green onions, chopped<br>\u2022 2 teaspoons crushed garlic<br>\u2022 1 chili pepper chopped<br>\u2022 2 tablespoons clarified butter<br>\u2022 1 ripe tomato, cut into cubes<br>\u2022 \u00bd red bell pepper, cut into cubes (optional)<br>\u2022 2 tablespoons fresh coriander chopped<br>\u2022 150 g fresh cheese diced<\/p>\n\n\n\n<p><strong>Preparation method<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Cut jerked beef into small pieces, eliminate nerve tissue and fat and leave to soak overnight, changing the water at least three-four times. The next day drain the meat and cook meat in a little water until tender. If you like, shred the meat.<\/li><li>Wash the beans then soak them bay leaf for a few hours. Cook them with until beans are cooked through but not falling apart. Set aside the beans with the cooking water.<\/li><li>Fry the bacon pieces in a large frying pan until golden brown, add the chopped sausage, the cooked jerked beef, a bit of corn oil and saut\u00e9 for about 5 minutes.<\/li><li>Add butter and onion, and let it cook until the onions soften up. Add garlic and chili pepper and continue to fry for another minute.<\/li><li>Add the washed rice, the bell pepper and the salt. Stir-fry for a few minutes.<\/li><li>Add tomatoes, coriander and green onions. You can use parsley instead of coriander.<\/li><li>Add the cooked beans with the cooking water, stir, cover the pan and cook for about 10 minutes. If necessary add a little more boiling water.<\/li><li>Turn off the flame and add the cheese, stir, cover the pan and let stand for a few minutes.<\/li><li>This recipe can be served as a one dish meal or accompanied by fried cassava, fried plantains or fried beef jerky.<\/li><\/ol>\n\n\n\n<p>Variants:<br>\u2022 This recipe can be made with leftover beans and rice and with only one type of meat.<br>\u2022 You can use cheese and coriander only as a garnish.<br>\u2022 Adding 4 tablespoons of coconut milk just before serving you make it more creamy.<\/p>\n\n\n\n<p>Serve 4-6 persons<\/p>\n\n\n\n<p><br><em>Posted on: 14 February 2016<\/em><\/p>\n","protected":false},"excerpt":{"rendered":"<p>CLICK HERE TO WATCH THE VIDEO &#8220;Bai\u00e3o de dois&#8221; is a classic dish from Northeast Brazil.
