It isn&#8217;t a risotto but it&#8217;s a side dish for meat, poultry or fish. This recipe is colorful and inviting.<\/p>\n\n\n\n<p><br><strong>Ingredients<\/strong><br>\u2022 400 g Basmati rice<br>\u2022 600 ml boiling water, approximately (almost double the volume of rice)<br>\u2022 \u00bd onion chopped<br>\u2022 1 garlic clove chopped<br>\u2022 2 carrots<br>\u2022 1 sweet pepper<br>\u2022 a handful of green peas or green beans<br>\u2022 1 zucchini<br>\u2022 2 tablespoons corn oil<br>\u2022 salt and black pepper<\/p>\n\n\n\n<p><strong>Preparation method<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Wash the rice several times until the water becomes clear. Add the rice to the boiling water, switch to very low heat and cover the pan. Simmer the rice for about 8 minutes. When water has dried, check if it is cooked. Add a little water if it is too hard. Turn off the heat and set aside.<\/li><li>Wash, peel (if necessary) and cut the vegetables into small cubes.<\/li><li>In a large frying pan heat the oil over medium-high flame and saut\u00e9 the vegetables, stirring occasionally.
