Manioc flour has been added to beans to improve the nutritive value of the meal during the XVIII century expeditions to explore the new world&#8217;s territory and to search for gold and precious stones. The \u201ctutu\u201d is a very popular dish in Rio de Janeiro, Minas Gerais and S\u00e3o Paulo, and is yet another version of &#8220;rice and beans&#8221;, the national dish. \u201cTutu\u201d is always served with white rice, vegetables and meat. Traditionally it is made with black beans in Rio de Janeiro and Minas Gerais, and with brown beans (\u201cmulatinho\u201d and \u201ccarioca\u201d) in S\u00e3o Paulo. The &#8220;Virado \u00e0 paulista&#8221; is made with &#8220;tutu&#8221;.<\/p>\n\n\n\n<p><br><strong>Ingredients<\/strong><br>\u2022 800 g brown or black beans cooked (approximately 250 g dried beans)<br>\u2022 2 chopped green (spring) onions<br>\u2022 parsley<br>\u2022 125 g raw manioc flour, approximately<br>\u2022 salt<br>\u2022 ground pepper or chilli pepper<\/p>\n\n\n\n<p><strong>Preparation method<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Follow the same preparation method of &#8220;feijoada&#8221; to cook the beans.<\/li><li>Crush half the cooked beans and return to saucepan.<\/li><li>Add the chopped parsley, the chopped green onions, about 2 cups of water and the manioc flour, a little at a time, until it reaches a soft &#8220;polenta&#8221; consistency.<\/li><li>Cook, stirring, over a low heat for a few minutes.<br><\/li><\/ol>\n\n\n\n<p><br><em>Posted on: 11 November 2011<\/em><\/p>\n","protected":false},"excerpt":{"rendered":"<p>The \u201ctutu\u201d consists of bean pur\u00e9e thickened with manioc flour or corn flour.
