Bolo moreno (Spice Cake)

It’s a very delicious cake, spiced and “flavoured” with typical Brazilian ingredients like coffee, cocoa, cinnamon and cloves. It is perfect for a snack and for afternoon tea.
You can just dust this cake with powdered sugar or glaze it with sugar or chocolate.


Ingredients
• 250 g softened butter
• 300 g sugar
• 4 large eggs
• 350 g all-purpose flour
• 1 tablespoon baking powder
• 1 teaspoon ground cinnamon
• ½ level teaspoon clove powder
• 125 ml cold strong coffee
• 50 ml chocolate liquor
• 100 g seedless raisins
A large cake pan, about 3 litres in capacity

Preparation method

  1. Sift together all of the dry ingredients: flour, cinnamon, clove and baking powder.
  2. Wash the raisins and soak them in the liqueur.
  3. Cream softened butter (melted or at room temperature) and sugar until light and fluffy.
  4. Add the eggs one at a time and continue beating until well mixed.
  5. Gradually and gently stirring add the dry ingredients and the coffee.
  6. Finally add the soaked raisins with the liquor.
  7. Pour the batter into a cake pan lined with parchment paper.
  8. Bake in preheated oven at 190°C for about 50 minutes. Stick a toothpick in the centre of the cake, if it comes out clean the cake is ready.
  9. Let it cool, unmould and sprinkle powdered sugar on top.
