“Prunes Wrapped in Bacon” is a delicious appetizer and is also used as a side dish on special occasions. The apple purée, with its sweet and delicate taste, balances the richness and makes and contrasts nicely with the crunchy bacon and the dense prune. Very simple and quick to prepare, they complement each other and can enrich special occasions such as Christmas and New Year’s Eve.
Ingredients
For the prunes:
• 2 – 3 pitted dried prunes per person
• 1/2 slice of bacon per prune
For the apple purée:
• cooking apples, peeled, cored and quartered (about 60 g per person)
• salt
• ground black pepper
Preparation method
Preparation of the prunes wrapped in bacon:
Wrap 1/2 a slice of bacon around each prune, and secure with toothpicks. Bake until the bacon is crisp (they may also be cooked with the turkey or the roast). You may prepare them the day before and warm up just before serving.
Preparation of the apple purée: Peel and cut apples into small cubes. Add a little water and cook in a covered pan on low heat. When soft, blend with an immersion blender. Season with little salt and black pepper. Serve one or two tablespoons per person.
