Virado à paulista (Bean Purée with Pork)

The “tutu” served with white rice, “couve refogada”, “torresmo” (cracklings), fried sausage and fried egg is the tasty “virado à paulista”, the traditional Monday lunch menu at São Paulo (Brazil).

Ingredients
• 1 recipe of “tutu de feijão”
• 150 g bacon or cracklings
• 6 sausage
• 6 eggs
• 500 g braised cabbage
• 400 g white rice

Preparation method
1. Cut bacon into pieces that are not too small, fry in a little oil and set aside.
2. Fry the sausages in the same frying pan and set aside.
3. Put the bacon and sausages and the frying pan oil into the “tutu”.
4. Fry the eggs.
5. Serve the “tutu” with white rice, braised cabbage, sausages, fried bacon or cracklings and fried eggs.

Yield: 6 servings.
